"Raw honey" gets thrown around loosely enough that it is worth explaining, precisely, what changes when honey is heated - and what does not.

What "Raw" Actually Means

Raw honey is honey that has never been heated above the natural temperature inside a beehive, roughly 35-37°C. Once honey is heated above about 40°C, two natural enzymes it carries - diastase and invertase - begin to degrade. Commercial processing often uses higher heat, both for faster bottling and to prevent the natural crystallisation that raw honey undergoes over time.

Diastase Number: A Real, Lab-Measurable Difference

Diastase Number (DN) is an actual quality metric labs can measure. Fresh raw honey typically tests at DN 15-30 or higher. The international Codex Alimentarius food standard sets a minimum of only DN 8 - meaning a lot of commercially processed honey passes food-safety standards while still having lost a substantial share of its original enzyme activity.

A related marker, HMF (5-hydroxymethylfurfural), rises as honey is heated or ages. A comparative study of honeys found imported/commercial honey carried elevated HMF and reduced diastase activity compared with raw local honey - real, measured evidence that "raw" and "processed" are not just marketing categories.

Honey and Blood Sugar: The Honest Answer

This is genuinely nuanced, and we would rather explain the nuance than give a marketing-friendly "yes." Honey's average glycemic index sits around 58 versus roughly 80 for table sugar, but this varies enormously by floral source - acacia honey around GI 35, buckwheat around 30-40. A meta-analysis of clinical trials found that only small daily amounts, around 10 grams (half a tablespoon), showed a measurable HbA1c improvement; larger amounts showed no additional benefit. If you are diabetic or pre-diabetic, treat honey as a small, deliberate substitution for other sugar - not a free pass - and talk to your doctor about how it fits your specific management plan.

Antibacterial Properties: Not Just Manuka

Manuka honey's antibacterial activity (driven by methylglyoxal) is well studied, including validated effectiveness against antibiotic-resistant bacteria like MRSA in lab conditions. Less widely known: a study on raw wildflower honey (non-Manuka) found comparable antibacterial performance against resistant wound bacteria. This is real evidence that raw honey's antibacterial properties are not exclusive to one variety - though we want to be precise that this describes raw honey as a category in lab studies, not a certified claim about any specific jar, including ours.

Who Should Never Eat Honey

No honey - raw or processed, even cooked into food - for children under 12 months. Honey can carry Clostridium botulinum spores; an infant's immature gut microbiome cannot suppress them the way an adult's can, and cooking does not destroy the spores. This is a CDC and American Academy of Pediatrics guideline, and it applies equally regardless of how "raw" or "pure" the honey is.

How Much Honey Per Day

1-2 tablespoons (15-30g) per day is the commonly cited safe range for healthy adults. Above 3-4 tablespoons, you are mainly adding sugar and calories without proportional benefit. The best practical use is as a direct replacement for refined sugar, not an addition to your existing intake - stirred into cooled tea, drizzled over yoghurt, or swapped 1:1 into recipes.

Why Mountain-Sourced Honey Is Genuinely Different

This part is real apiculture science, though we want to be clear it describes mountain honey generally rather than certified lab data on this specific batch: cooler high-altitude temperatures concentrate nectar sugars and help preserve enzymatic quality, and alpine bee forage (wild thyme, mountain clover, rhododendron) differs meaningfully from lowland crop forage, giving mountain honeys distinct nectar-sourced compounds compared to honey from intensively farmed lowland regions.
